Spiced Chicken Rice with Mint Yogurt Preperation Time20 Minutes
Ingredients

2 cups cooked HINODE Basmati Rice

1 1/2 lb. chicken (approx. 3 breasts)

4 tbsp. vegetable oil

2 onions, sliced
-
2 cups chicken stock or water
-
4 tsp. each:ground coriander, cardamom, cumin, and curry powder

12 cloves
-
4 tsp. garlic, crushed

Salt and pepper to taste

1/2 cup plain yogurt
-
4 tsp. thick mint sauce
Method

Heat oil in a frying pan and fry chicken until browned, take out of the pan and set aside to cool and slice thinly.

Mix together all dressing ingredients.

Prepare rice per package instructions.

In a bowl, combine all other ingredients and add chicken.

Pour the dressing over and toss together.
Tips
-
HINODE Jasmine Rice can be used in place of HINODE Basmati Rice.
Variations
-
Beef or lamb could be used as an alternative to chicken.
