Spiced Chicken Rice with Mint Yogurt

Ingredients

  • 2 cups cooked HINODE Basmati Rice
  • 1 1/2 lb. chicken (approx. 3 breasts)
  • 4 tbsp. vegetable oil
  • 2 onions, sliced
  • 2 cups chicken stock or water
  • 4 tsp. each:ground coriander, cardamom, cumin, and curry powder
  • 12 cloves
  • 4 tsp. garlic, crushed
  • Salt and pepper to taste
  • 1/2 cup plain yogurt
  • 4 tsp. thick mint sauce

Method

  • Heat oil in a frying pan and fry chicken until browned, take out of the pan and set aside to cool and slice thinly.
  • Mix together all dressing ingredients.
  • Prepare rice per package instructions.
  • In a bowl, combine all other ingredients and add chicken.
  • Pour the dressing over and toss together.

Tips

  • HINODE Jasmine Rice can be used in place of HINODE Basmati Rice.

Variations

  • Beef or lamb could be used as an alternative to chicken.
