Easy Spanish Chicken Paella

Ingredients

 

  • 2 cups HINODE Medium Grain Rice (Microwavable, White or Brown)
  • 2 tbsp. oil
  • 1 lb. chicken, diced (approx. 2 breasts)
  • 1 onion, chopped
  • 3 cups chicken or vegetable broth
  • 1 can (14.5oz) tomatoes, diced
  • 2 tbsp. tomato paste
  • 2 tbsp. Worcestershire sauce
  • 1 cup peas
  • 1 green bell pepper, thinly sliced
  • 3/4 cup black olives (optional)
  • 1/3 cup chopped fresh parsley or basil 

Method

 

  • Heat 1 tbsp. oil in non-stick pan over medium heat. Cook chicken for 2-3 minutes, until lightly browned. Remove from pan.
  • Prepare HINODE Medium Grain Rice per package instructions.
  • Stir rice into pan, add remaining oil, cook onion and rice for 2 minutes.
  • Stir in broth, tomatoes, paste and sauce. Bring to a boil, stirring occasionally.
  • Add chicken and simmer, covered, for 10 minutes.
  • Add peas, green bell pepper and olives, simmer for 5 minutes or until liquid is absorbed.
  • Sprinkle with parsley and serve.
