Easy Spanish Chicken Paella Preperation Time10 Minutes
Ingredients

2 cups HINODE Medium Grain Rice (Microwavable, White or Brown)

2 tbsp. oil

1 lb. chicken, diced (approx. 2 breasts)

1 onion, chopped
-
3 cups chicken or vegetable broth
-
1 can (14.5oz) tomatoes, diced

2 tbsp. tomato paste
-
2 tbsp. Worcestershire sauce
-
1 cup peas
-
1 green bell pepper, thinly sliced

3/4 cup black olives (optional)

1/3 cup chopped fresh parsley or basil
Method

Heat 1 tbsp. oil in non-stick pan over medium heat. Cook chicken for 2-3 minutes, until lightly browned. Remove from pan.

Prepare HINODE Medium Grain Rice per package instructions.

Stir rice into pan, add remaining oil, cook onion and rice for 2 minutes.

Stir in broth, tomatoes, paste and sauce. Bring to a boil, stirring occasionally.

Add chicken and simmer, covered, for 10 minutes.

Add peas, green bell pepper and olives, simmer for 5 minutes or until liquid is absorbed.

Sprinkle with parsley and serve.
