Coconut Rice with Mango

Ingredients

 

  • 3 cups HINODE White Rice (Long, Medium, Short or Fragrant) 
  • 2 cups coconut milk
  • 3 tbsp. crushed palm sugar or soft brown sugar
  • pinch of salt
  • 2 mangos, peeled and diced

Method

 

  • Combine rice, coconut milk, sugar and salt in a saucepan.
  • Bring mixture to the boil, reduce heat, cover and simmer for 20 minutes or until rice is tender and liquid is absorbed. Stir frequently to prevent the rice from sticking to the pan.
  • Spoon into serving dishes and top with diced mango.

Tips

  • If fresh mangos are not available, you can substitute canned or frozen mango.

Variations

  • This recipe is also delicious with fresh berries.
