In English, Hito-Aji translates to “the best or number one flavor.” It’s an expression that is shared by meticulous sushi chefs and discerning home cooks alike.

Cooking with a Rice Cooker
1. Place 2 cups of rice into rice cooker.
2. Add water to 2 cup line on rice cooker.
3. Stir rice, close lid and start cooker.
4. When cooking ends, let stand covered for 5 minutes.
5. Fluff with fork and serve.
Rice to water ratios vary by rice cooker; follow manufacturer's instructions.
How to Cook Rice in a Pot
1. Place 2 cups of rice in a saucepan.
2. Add 2 3/4 cups of water, bring to a boil and stir.
3. Reduce heat and simmer covered for 25 minutes, or until moisture is absorbed.
4. Remove from heat and let stand covered for 5 minutes.
5. Fluff with fork and serve.
Cooking Time
Cook 12 minutes for firm rice. Cook 15 minutes for soft rice.
